Salt and pepper
Cut the tomatoes in half, sprinkle with salt, pepper and Italian seasoning. Top with Parmesan cheese and broil till the cheese is golden brown. Garnish with freshly chopped parsley or basil. Serve with steak and potatoes or fish and rice.
Here’s a dish that’s been around for so long we can’t even remember its provenance. It took years for Uncle Botsy to develop a taste for tomatoes, and this was his favorite way to enjoy them. In the earlier years, the broiled tomatoes were a perfect accompaniment to a charbroiled steak and mashed potatoes. Now, he enjoys them with seared fish and rice. Sprinkle some Mexican five-cheese mix on the tomatoes and finish off with Parmesan for an extra cheesey flavor. Question: Are there any restaurants in Hawaii that serve this old classic?
